The ownership team behind Fountainhead, Fountainhead Market, and the Bar on Buena is proud to introduce Chicago's first cider focused pub and bistro. While gradually building cider programs at their other establishments, the ownership team began developing such a passion for the beverage, that considering the complete renaissance that the beverage is currently experiencing in the US, led the team to conclude that it was high time this city had an establishment primarily focused on the apple. Given the team's proclivity for travel and visiting the source of the products they champion, trips to Michigan, England, France, and Spain ensued, and the full concept was born - a pub and bistro that would draw influence from all of the great cider producing regions of the world, not only in the beverage offerings, but in the cuisine, in the decor, in the music, and in the approach to serving cider, apple-based spirits, and cocktails combining the two, in an intimate and welcoming setting. With a specific emphasis on influences from Northern France and Southern England, The Northman hopes to bring a truly unique concept to both the cider revolution and the north side of Chicago.
2 Towns Ciderhouse wants to bring cider back to the people. At 2 Towns Ciderhouse, we believe that the long history of cidermaking demands respect and deserves to be done right. Starting with the highest quality, whole ingredients from local farms, we take no shortcuts in crafting our ciders. We refuse to add processed sugars, concentrates or artificial flavors, and instead use slow, cold fermentation methods to allow the fruit to speak for itself. As a family-owned company, we are committed to the growth of our team and enrichment of our communities. We take pride in producing a true Northwest craft cider.
The Blake family has been growing apples since 1946, starting with Gerald and Lovey Blake and their 13 kids on a 150 acre farm. We now have expanded to three locations, employ over 500 people, farm over 1000 acres and are becoming one of the nations premier Orchards and Cider Mills.
Blake’s Hard Cider Co. was established in 2013, seeing the need for a true, natural hard cider made from only the most natural ingredients. We use only 100% all natural apple cider from apples that are grown, picked and pressed right on our farm. Right Bee Cider is locally owned and operated by a Chicago husband-and-wife team, and proud to be Chicago's first cidery. Co-Founders Charlie Davis and Katie Morgan met in Chicago in 2011. After noticing her affinity for hard cider, he used his passion for fermentation and professional experience in the industry to make her a hard cider for her birthday. His efforts to woo her were successful. She loved the cider. They started dating shortly after and the idea for Right Bee Cider was born. Right Beside Her. The business was officially launched in 2014, six months after their wedding. "We make ciders that we like to drink, so everything we produce is on the drier end of the spectrum, while remaining light and approachable." Stem Ciders was founded in 2013 in Denver, CO, by Eric Foster and Phil Kao. With a deep appreciation for craft and a strong commitment to reviving the cider tradition, they set out with three main principals: quality, style, and tradition. We opened our RiNo cider house doors in January of 2014 with three ciders on tap, and just last month launched California as our fifth state! Our ciders are made with fresh-pressed full juice from whole, ripe culinary apples sourced primarily from the Pacific Northwest. We are firm believers that the fewer the ingredients, the closer we are to the apple. Yeah, it's dry. Drink it already.
